Crepe with Banana Flambe

Friday, 17th February
( Hot and Cold Desserts)

It's friday again. Today, I have done crepe, banana flambe and orange sabayon.
1st is prepare crepe batter and rest for an hour. Next, the chef demo how to do banana flambe.
Like usual, after demo, I started to do the banana flambe and also orange sabayon.

Butter Cake

Thursday, 16th February
( Prepare and Produce Cakes)

I'm have done butter cakes today. Unfortunately not photos. My class had produced 16 different types of butter cakes with each different types of ingredients. The purpose is to let us know by using what ingredient, the end product with be different.

Besides that, the chef let us practice piping using butter cream and chocolate. It was fun!!!!!! But I didn't have the chance to do piping using chocolate because there is no time. Haiz...

Salads

Tuesday, 14th of February   *It's Valentine's Day*
( Unit Kitchen - Practical Class )

For today, I'm have done salads, Green and Potato Salad.
The chef demo how to do tomato concasse, croutons, mayonnaise, vinaigrette, chopped parsley, compound butter and clarified butter. 
After the demo, I start to prepare the ingredients for doing the salad.
Well, my only manage to take a photo of croutons, mayonnaise and vinaigrette.

After everything is done, I started to do the salad and plate them... 





Potato Salad 

( Potato with tomato concasse, chopped parsley and mix with mayonnaise and a teaspoon of vinaigrette )





Green Salad

( Mix green with tomato concasse, sliced onion, croutons and vinaigrette, sprinkle with some chopped parsley on top )










Yummy, huh??!??!?? It was very good and I'm happy with my products.



Poached Pear

Friday, 10th of February.
( Hot and Cold Desserts Class)

Today, I'm having Hot an Cold Desserts class. It is the 1st class and I started to make desserts. YUM... Today, I've done Poached Pear, Chocolate Sauce and some Jelly.

Actually, it is quite nice. The pear is soft because is cook for 30-40 minutes. While the pear is poached, the chef teach how to make chocolate sauce. My Favorite. Later is prepare the desserts as below picture.

Books

At William Angliss, I need to purchase books to study and is a compulsory to buy them in their book shop. It ain't cheap. Oh no!!!!!!!!!!

Semester 1 have 2 terms. 1st term I studied Workplace Hygiene, Unit Kitchen, Prepare and Produce Cakes, Receive and Store and Hot and Cold Dessert. 2nd term is Intro to Hospitality, Prepare and Produce Yeast Goods, Preparation Kitchen, Coffee Service and Pastries. Another subject that is for 2 terms is Common Core.

Well, apparently I have to get the utensils and uniforms here. Before I come here, I had e-mailed the admin to give me the sample photo's of these as the agreement had stated that I can buy them from my home county. But they reply that I have to attend the International Student orientation to know what to buy. So, no choice lo. These stuffs are soooooooo expensive. OMG!!!!!!!!!!!

William Angliss Institute

As my previous post, I've come to melbourne to start another adventure of my life. Well, the class had started and I think I've made the right decision to come here. Below are picture of William Angliss Institute Campus. OBSERVED!!!!!!!










I just take the pictures of the front part of the building. Actually the institute is big. There are 6 building, A to F.
